- 1/2 pound ground pork
- 1/4 tablespoon salt
- Vegetable oil
- 1/2 tablespoon soy sauce
- 1/2 tablespoon cooking wine
- 1/2 tablespoon sesame oil
- 1/2 tablespoon ground pepper
- 1/2 tablespoon Chinese five spices powder
- 1/2 tablespoon Chinese Sichuan peppercorn powder
- 1 egg
- 1 package Chinese dumpling wrappers
- 1 cup water
Mix ground pork with salt, 1 tablespoon of vegetable oil, soy sauce, cooking wine, sesame oil, ground chili pepper powder, Chinese five spices powder and Sichuan peppercorn powder. Add an egg and some water, mixing until the meat becomes a paste.
For each dumpling, put 1/2 tablespoon of ground meat into one dumpling wrapper and fold the wrapper. Use finger to coat the edges of the wrapper with some water. Pinch top edges together so that they stick to each other (leave the two ends open). Heat a large pan over high heat. When the pan is hot, add enough vegetable oil to coat the pan and heat for 20 to 30 seconds. Put the dumplings into the pan one by one so that all the dumplings stand stably. When bottoms of dumplings become hard and golden-brown, add just enough water to submerge 1/2 height of dumplings. Cover the pan. Reduce heat to medium-low and simmer until the water is almost gone.
