Chinese Rice Noodle Recipe: Yunnan Cold Rice Noodles

Ingredients

  • 6 cups water
  • 1/2 package dried rice noodles
  • Vegetable oil
  • 1/4 pound ground pork
  • 2 tablespoon Chinese Dandan noodle sauce (or Sichuan spicy chili sauce)
  • 5 tablespoons soy sauce
  • 5 tablespoons sesame oil
  • 2 tablespoons chopped cilantro

Directions

Put 6 cups of water in a pot and bring to a boil over high heat. Turn off the heat and soak the dried rice noodles in the hot water, covered, until the noodles completely soften (about 20 minutes).

Heat a large pan over high heat. When the pan is hot, add enough vegetable oil to coat the pan and heat for 20 to 30 seconds. When the oil is hot, add ground pork and stir-fry the meat until it becomes white.

Add Chinese Dandan noodle sauce (or Sichuan spicy chili sauce) and continue to stir-fry the meat for another 5 seconds. Turn off the heat and cover the pan. Use cold water to cool the rice noodles, and then dry the noodles. In a big bowl, mix rice noodles with the cooked pork, soy sauce and sesame oil. Top the noodle mixture with chopped cilantro and serve.
