Chinese Chicken Soup Recipe: Chicken Broth with Mushrooms

  • 6 cups water
  • 1/2 pound chicken thighs, cut into 1-inch pieces
  • 3 shiitake mushrooms, each cut into four pieces
  • Salt
  • 2 tablespoons sesame oil
  • 1 tablespoon chopped green onions
  • 1 tablespoon chopped cilantro

Add water to a large pot and bring to a boil. Add chicken thighs and leave the water boil until chicken legs turn white completely. Reduce heat to medium-low and simmer 20 minutes. Add mushrooms and 2 tablespoons of salt. Cook 5 more minutes. Ladle the soup into bowl and add sesame oil, chopped green onions and cilantro.
